Easy Pineapple Parfait

2 c. fruit cocktail, chilled, well drained
6 oz can frozen pineapple juice concentrate
1 qt. vanilla ice cream

Combine fruit cocktail and pineapple juice. Alternate layers of ice cream and fruit mixture in chilled parfait glasses. Garnish with pineapple chunks and maraschino cherries. Makes 16 servings.
